I have been holding on the iPhone OS 3.0 as I had heard 3.1 caused more battery drain, but in order to make the MMS piece happen I had to update (iTunes 9.0.1, and the phone os 3.0.1, and then my ‘Carrier Config’).
Good news is, it all works. I backed up my iTunes BEFORE the update. Ran the update with my PHONE UNPLUGGED, then plugged in the phone, updated it to 3.0.1 then it said I had a ‘Carrier’ update which is the config file for the ATT network. To confirm that your device is ready, go to Settings > General > About. Your carrier version should be ‘AT&T 5.5′.
When I goto MESSAGES I now have a new icon on the bottom:

If you type your text then hit the camera icon it adds an image from your library or one that you take to the same text message and then you can send it.
Sent it to a friend in NYC to see if it plays nice with ‘other’ carriers. Have not yet tested it with other iPhone users, but will report back.

iTunes 9.0.1 fixes include:

- Genius is now automatically updated to show Genius Mixes.
